- Tools: Non-stick aluminum foil.
- 1 pound red potatoes, 1-2″ in size, washed and scrubbed
- 1 tablespoon olive oil
- 1 tablespoon fresh chopped rosemary
- salt and pepper to taste
- Preheat oven to 425 F.
- Cover a baking sheet with non-stick aluminum foil.
- Halve or quarter potatoes (depending on their size).
- Place potatoes, oil, rosemary, salt, and pepper in a medium bowl.
- Toss to coat.
- Place on baking sheet and bake for 20-30 minutes.
